delicious

yesterday before church i decided to whip up some coconut pancakes and buttermilke syrup for the bishop boys.
my good deed was spoiled when i had to put the little down for an early nap due to massive crankiness and handsome had yet to arrive to planet earth from his deep sleep.
so whats a girl to do when there is no one there to eat her pancakes?
take pictures of it of course. (syssa, don't judge my foodie pics ok.)



so this is the easiest recipe ever.
with nikson's allergies i have to be careful, but since we are nursing twice a day i figured i could splurge a bit.

pancakes:

2.5 c. krusteaz pancake mix
1 can coconut milk
.5 c. of rice dream rice drink

i mix it all together until it becomes a little runny. 
griddle those babies up and place on a white ceramic scalloped lace plate.

syrup:

  • 1 1/2 cups white sugar
  • 3/4 cup buttermilk
  • 1/2 cup butter
  • 2 tablespoons corn syrup
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract

serve the syrup piping hot and don't just drizzle here people.
lay it on thick.
for optimum soaking let it set while you put your cranky little down for a nap and then come back and take pictures of it. 
serve with a goblet full of your favorite breakfast beverage. 
i chose apple juice.
